  • 2 pounds potatoes, peeled and cubed
  • 1 cup cooked and diced beets
  • 1 cup diced carrots
  • 1 cup green peas, fresh or frozen
  • 3 hard-boiled eggs, chopped
  • 1 cup mayonnaise
  • 1 tablespoon mustard
  • 2 tablespoons apple cider vinegar
  • ¼ cup finely chopped green onion
  • Salt and pepper to taste
  • 1 tablespoon lime juice

Instructions
