Cook the Risotto:

  • In a large skillet or heavy-bottomed pot, heat the olive oil over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Stir in the Arborio rice, ensuring each grain is coated with the oil and onion mixture. Toast the rice for about 2 minutes.
  • If using, pour in the white wine and cook until it has evaporated.
