Lemon Rosemary Lentil Soup Ingredients
- Lentils: The star of the show, lentils are not only nutritious, packed with protein, fiber, and minerals, but also a symbol of abundance and renewal in many cultures.
- Carrots, Celery, Onion, Garlic: This classic mirepoix, with the aromatic kick of garlic, forms the flavorful backbone of the soup.
- Lemon: The zest and juice of a fresh lemon add a bright, invigorating lift to the earthiness of the lentils, creating a delightful balance.
- Rosemary: A sprig of rosemary introduces a woody aroma and a whisper of the Mediterranean, transforming the soup with its powerful flavor profile.
- Vegetable Broth: The liquid gold that brings all the ingredients together, enriching the soup with depth and warmth.

For the Vegetable Broth
I’ve learned the value of minimizing waste, especially in the kitchen. A practical tip for this recipe is to use vegetable scraps—carrot peels, celery ends, onion skins, and garlic trimmings—to make homemade vegetable broth.
It’s a simple, effective way to extract every bit of flavor and nutrition from your ingredients, while reducing your environmental footprint.
Simply simmer these scraps in water for an hour or so, strain, and you have a delicious, homemade broth that serves as the perfect base for your Lemon Rosemary Lentil Soup.

As the lentils simmered with the carrots, celery, and onions, the kitchen filled with a comforting aroma that felt like a warm hug. The addition of lemon and rosemary was a revelation—the bright citrus and the earthy herb elevated the humble lentils into something truly special.

Lemon Rosemary Lentil Soup Recipe and Instructions

Lemon Rosemary Lentil Soup
Ingredients
- 1 cup dried lentils, rinsed and drained
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups homemade vegetable broth (see zero waste tip below)
- The zest and juice of 1 lemon
- 1 large sprig of rosemary (or 1 teaspoon dried rosemary)
- Salt and pepper, to taste
Instructions
- Prepare the Lentils: In a large pot, heat the olive oil over medium heat. Add the chopped onions, carrots, and celery. Sauté until the vegetables are soft and the onions are translucent, about 5-7 minutes.
- Aromatics: Add the minced garlic to the pot and sauté for another minute until fragrant. Be careful not to let the garlic burn.
- Simmer the Soup: Add the rinsed lentils to the pot along with the homemade vegetable broth. Stir to combine. Add the sprig of rosemary (or dried rosemary if using) and bring the mixture to a boil. Once boiling, reduce the heat to a simmer, cover, and let cook for about 25-30 minutes, or until the lentils are tender.
- Lemon Zest and Juice: Once the lentils are cooked, remove the pot from the heat. Remove the sprig of rosemary (if using a whole sprig). Add the lemon zest and lemon juice to the pot. Stir well to combine. Season with salt and pepper to taste.
- Serve Warm: Taste the soup and adjust seasoning if necessary. Serve the soup hot, with a drizzle of olive oil and a sprinkle of chopped parsley if desired.

I was born and grew up in Port-au-Prince, Haiti, where my grandmas, mom, and aunts taught me everything about cooking. Now, I live in the US, and I love hiking, reading, and making meals for my family.
