  • 1 cup dried lentils, rinsed and drained
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups homemade vegetable broth (see zero waste tip below)
  • The zest and juice of 1 lemon
  • 1 large sprig of rosemary (or 1 teaspoon dried rosemary)
  • Salt and pepper, to taste

Instructions
 

  • Prepare the Lentils: In a large pot, heat the olive oil over medium heat. Add the chopped onions, carrots, and celery. Sauté until the vegetables are soft and the onions are translucent, about 5-7 minutes.
