I’ve got a straightforward recipe that brings a bit of Haiti right to your kitchen. It’s easy to follow and doesn’t need fancy stuff.

Ingredients for the Haitian Sardine Recipe:

  • 1 pound fresh sardines, cleaned and gutted
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 shallot, finely chopped
  • 1 scotch bonnet pepper, deseeded and finely chopped (use less for less heat)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon sea salt, or to taste
  • 2 tablespoons lime juice or sour orange juice

Prepare the Sardines:

Ensure your sardines are cleaned and gutted. Rinse them under cold water and pat dry with paper towels.

Grab a blender or food processor and toss in the olive oil, minced garlic, finely chopped shallot, diced scotch bonnet pepper (careful with the heat!), and chopped parsley.

Sprinkle in the sea salt and pour in the lime or sour orange juice. Give it all a good whisk until everything’s nicely mixed together.
