- 4 salmon fillets about 6 oz each
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 1 tablespoon fresh thyme leaves
- 1 teaspoon ground allspice
- ½ teaspoon scotch bonnet pepper finely minced (or substitute with habanero)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 small onion thinly sliced
For serving:
- Lime wedges
- Fresh parsley chopped
Instructions
- In a small bowl, mix lime juice, olive oil, garlic, thyme, allspice, scotch bonnet pepper, salt, and black pepper to create a marinade.
- Place salmon fillets in a shallow dish and pour the marinade over them. Add the sliced onions on top. Cover and refrigerate for 30 minutes to 1 hour.
- Preheat your grill or grill pan over medium-high heat.
- Remove salmon from the marinade, letting excess drip off. Reserve the marinade and onions.
- Grill the salmon for about 4-5 minutes per side, or until it flakes easily with a fork.
- While the salmon is grilling, pour the reserved marinade and onions into a small saucepan. Bring to a boil, then simmer for 5 minutes to create a sauce.
- Serve the grilled salmon topped with the cooked marinade sauce and onions.
- Garnish with fresh parsley and lime wedges.
