Authentic Haitian Epis Recipe

Ingredients
  

  • 1 cup green bell pepper, chopped
  • 1 cup red bell pepper, chopped
  • 2 cups scallions, chopped
  • 1 cup fresh parsley, packed
  • 10 cloves garlic
  • 10-12 whole cloves
  • 1 medium onion, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • 1/4 cup olive oil or vegetable oil
  • Optional: 1-2 Scotch bonnet or habanero peppers for heat

Instructions
 

  • Prep Your Ingredients:
  • Wash all the vegetables and herbs thoroughly.
  • Roughly chop the bell peppers, scallions, parsley, cilantro, whole cloves, and onion.
  • Blending:
  • In a blender or food processor, combine all the chopped vegetables, garlic, lime juice, black pepper, and salt.
  • If you’re using Scotch bonnet or habanero peppers, add them now (be cautious with the amount due to their heat).
  • Create the Epis:
  • Pulse the ingredients, gradually adding olive oil, until the mixture forms a slightly coarse paste.
  • Storage:
  • Store the epis in an airtight container in the refrigerator. It can typically last for up to 2 weeks.
  • For longer storage, freeze it in ice cube trays, and then transfer the cubes to a freezer bag.
