Collard greens, a staple of traditional Southern cuisine, have always held a special place in my heart. They remind me of cozy family gatherings, where the table was laden with dishes that spoke of comfort and tradition.
However, living a vegetarian lifestyle meant reimagining these dishes in a way that stayed true to their roots while aligning with my dietary choices. Vegan Collard Greens Nutritional Benefits
Collard greens are leafy greens packed with vitamins and minerals, boasting high levels of vitamins A, C, and K, alongside calcium, iron, and potent antioxidants. The challenge of finding calcium and iron in a plant-based diet was beautifully met by collard greens, making them an essential part of my meals.
Their low calorie and high fiber content also align perfectly with my goals for a health-conscious lifestyle, proving that nature offers some of the best solutions for our dietary needs.

Culinary Applications
Moving beyond traditional Southern preparations, I’ve enjoyed experimenting with a variety of cooking methods and flavor profiles.
Steaming and sautéing are just the beginning; collard greens have found their way into my soups, stews, and even as a nutritious alternative to wraps for burritos and sandwiches.

Their ability to blend seamlessly into different cuisines, adopting a myriad of global spices, has made them a cherished ingredient in my vegan cooking repertoire.
It’s a testament to the fact that embracing a plant-based lifestyle doesn’t mean compromising on flavor or diversity in your diet.

Ingredients
- 1 bunch of collard greens, stems removed and leaves chopped
- 2 tablespoons olive oil or vegetable broth (for a low-fat version)
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 teaspoon smoked paprika (optional for a smoky flavor)
- 1 tablespoon apple cider vinegar
- 1 cup vegetable broth
- Salt and pepper, to taste
- Red pepper flakes, to taste (optional for heat)
Instructions
- Prepare the Collard Greens: Wash the collard greens thoroughly to remove any dirt or grit. Remove the tough stems and roughly chop the leaves into bite-sized pieces.
- Sauté the Aromatics: In a large pan or skillet, heat the olive oil or vegetable broth over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent and fragrant.
- Cook the Collard Greens: Add the chopped collard greens to the pan, stirring to combine with the garlic and onion. Sauté for about 2 minutes, until the greens start to wilt.
- Season and Simmer: Sprinkle the smoked paprika (if using) over the greens, and add the apple cider vinegar and vegetable broth. Stir to combine. Season with salt, pepper, and red pepper flakes to taste. Reduce the heat to low, cover, and simmer for about 20 to 25 minutes, or until the collard greens are tender.
- Serve: Once the collard greens are tender and flavorful, remove from heat and adjust seasoning if necessary. Serve hot as a side dish or incorporate into other dishes as desired.
I was born and grew up in Port-au-Prince, Haiti, where my grandmas, mom, and aunts taught me everything about cooking. Now, I live in the US, and I love hiking, reading, and making meals for my family.
