Herbed Vegan Potato Salad
Ingredients
- 2 pounds red potatoes scrubbed and cut into bite-sized pieces
- 3 tablespoons olive oil

- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh chives
- 3 tablespoons apple cider vinegar
- 2 teaspoons Dijon mustard
- 1 tablespoon maple syrup
- Salt and pepper to taste
Instructions
