As a child, the end of the school day was just the beginning of my anticipation for what came next. My mother would pick me up, and together, we’d make our way to the fresco merchant.
Joining the line, I remember the distinct sounds that filled the air—the buzzing of bees drawn to the sweet syrups, the rhythmic scraping of the manual ice shaver, and the visual allure of the brightly colored fresco cart. Sirop d’Orgeat ( I am still working on the syrup)
Ingredients:
- 1.5 cups sugar
- 1 cup water
- 1 to 2 tsp almond extract (based on your preference for almond intensity)
- 1 tsp orange flower water or rose water
Instructions:
- Make the Syrup: In a saucepan, combine the sugar and water. Heat over medium, stirring until the sugar has completely dissolved.
- Flavor the Syrup: Once the sugar dissolves, remove the saucepan from the heat. Stir in the almond extract immediately, adjusting the amount based on how strong you want the almond flavor to be.
- Add Floral Notes: Mix in the orange flower water or rose water to introduce a subtle floral undertone, enhancing the syrup’s complexity.
- Cool and Store: Let the mixture cool to room temperature. After cooling, pour the syrup into a clean, airtight container. It can be refrigerated and used within a month.
Red Pomegranate with a Hint of Almond Essence Syrup Recipe

Equipment:
- Ice shaver or blender
- Measuring spoons
- Clear plastic cups
- Spoon for mixing
Steps:
- Prepare the Ice:
- If using a blender, pulse ice cubes until finely crushed. For a more authentic texture, use an ice shaver, shaving the ice into fine, snow-like consistency.
- Roast Peanuts (if not pre-roasted):
- Preheat the oven to 350°F (175°C).
- Spread shelled peanuts in a single layer on a baking sheet.
- Roast for 10-15 minutes, stirring occasionally, until golden brown.
- Let cool, then finely chop.
- Assemble the Shaved Ice:
- Fill each clear plastic cup to the top with shaved ice, compacting it slightly.
- Add the Syrup:

- Top with Roasted Peanuts:
