Ginger-Soy Tofu and Butternut Squash Stir-Fry
Ingredients
- 1 block 14 oz extra-firm tofu, pressed and cubed
- 2 cups butternut squash peeled and cubed
- 2 cups broccoli florets
- 2 tablespoons vegetable oil
- 3 cloves garlic minced
- 1 tablespoon fresh ginger grated
- ¼ cup soy sauce low-sodium if preferred
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- ¼ cup water
- 2 green onions sliced
- 1 tablespoon sesame seeds
- 2 cups cooked rice white or brown
Instructions
- In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, cornstarch, and water. Set aside.
- Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook for 2-3 minutes per side until golden and crispy. Remove from pan and set aside.
- In the same pan, add remaining oil. Stir-fry butternut squash for 5-6 minutes until it starts to soften.
- Add broccoli florets and stir-fry for an additional 3-4 minutes until bright green and crisp-tender.
- Toss in minced garlic and grated ginger, stirring constantly for about 30 seconds until fragrant.
- Pour the sauce into the pan, stirring constantly. It will start to thicken almost immediately.
- Add the crispy tofu back to the pan and toss everything together until well coated with the sauce and heated through.
