Ingredients
  

  • 2 pounds of potatoes red or yellow work best
  • 1 pound of beets about 2-3 medium-sized beets
  • 2 carrots diced
  • 1 cup of peas fresh or frozen
  • 4 hard-boiled eggs diced
  • 1 cup of mayonnaise
  • 2 tablespoons of mustard
  • Salt and pepper to taste
  • Optional: 1/2 cup diced celery 1/2 cup diced apple, 1 tablespoon vinegar or lemon juice, 1 teaspoon sugar
